It knows when to push and when to ease off. The intensity levels of licorice, blackberry and saltbush-like flavour are dramatic in an in-your-face way, but the seductive slips of coffee-cream oak and red berried flavour are delivered at just the right moments. Tannin helps fuse the various components. Itís big, and itís (very) good.’

‘The price might seem steep but for the quality, it is not a lot. Juicy, vivid ripe aromatics of black berry, bay leaf and green garden herbs, an edge of pith and pulp of freshly squeezed berry juices. The palate is plush, ripe, smooth, even and long, alongside well-judged oak. The liquefied red fruits are persistent and wed to classy tannins. Going for beauty, not bulk this is a silky sheet of rippling fruit across the tongue’

‘Very youthful, very dark red/purple colour. The aromas are of black plum and star anise, with some super-ripe, warm climate cues. Rich, ripe, sweet-fruited. Full-bodied and firm, deep and grippy, with lots of guts and integrity, the aftertaste very long and satisfying. Cellar it.’

Small berries, low yields and open bunches characterise the Shiraz grown on Christo’s Paddock. These old vines produce grapes with great flavour intensity and richness, which are hand-picked before being whole-bunch pressed. Once the fermentation was complete the wine was pressed into a combination of new (40%) and old French oak barrels, where it matured for 18 months. Expect red and black berries, coffee and dark chocolate with a savoury edge and soft round tannins providing great structure and length.
